Cake pops have been a big deal for years now. Why? Because, who doesn’t love food on a stick! Seriously, pretty well anything can go on a stick. Pickles, pizza, hot dogs, chocolate, cookies… and anything else you can dream up
So how about pie?
This is really easy. Super cute for any get together and perfect to settle your pie craving without the temptation of an entire pie in front of you. Follow along and customize it however you like!
Ingredients / Supplies
Preheat oven to 425F
Pie crust (your favourite recipe or packaged mix)
Jam (flavour of your choice)
1 egg, beaten
1/2 cup Icing sugar
1 Tbsp Lemon juice
Lolly sticks or candy apple sticks
Cookie cutter or glass, about 8cm in diameter
Parchment paper (not needed if you’re using a baking stone)
I used a store bought pie crust mix (you just have to add water and mix), but you can use a homemade recipe if you like. Mix it up and roll it out like you would a regular pie crust.
Cut out your circles with a floured cookie cutter. You’ll need an even number. My pie mix (from the package) gave me 24 circles… but I could have gotten 26 if I tried lol.
Lay out half of your circles on a cookie sheet lined with parchment paper. I was using a baking stone, so I didn’t need any. Place your lolly or wooden sticks and about a teaspoon of jam on each circle. I was using blueberry rhubarb jam.
Place the other half of the circles over top pressing them closed around the edges with a fork or your fingers, making sure to press around the sticks well.
Brush the tops with the beaten egg and bake in 425F for approximately 20 minutes or until the tops are nicely golden.
Remove and let cool completely on a cooling rack.
In the meantime, measure out icing sugar in a bowl and add lemon juice. Mix well, and drizzle over the pie pops.
How adorable is this? Time to eat!
PS, if you can’t find lolly sticks for the pie pops, you can omit them and call them pie cookies or hand pies.
