Pretty little nest cupcakes. This is not a complicated endeavor and the results are super cute! If you have older kids who like to bake, this could be just the right project for Easter. But don’t think this has to be limited to just Easter. A baby shower or house warming party would be excellent too.
I baked up a dozen basic white cupcakes, but added about 1/3 of a dram of LorAnn Oils, banana creme flavoured extract. It is potent stuff and it rocks! It was enough to give them a fantastic banana flavour without overkill.
Next up, a basic buttercream frosting. Use your favourite recipe. There are some great ones out there on the www. I also added a bit more banana creme extract, a drizzle at a time, tasting along the way until it was the banana flavour I was looking for.
Finally, you need some toasted coconut. I only had un-toasted coconut on hand, so I added it to a pan over medium heat and kept it moving with a wooden spoon until it was nice and brown. It really adds a lot to the flavour and texture to the coconut.
Frost your cooled cupcakes with the buttercream frosting and add a generous amount of coconut before the frosting sets up. If you’re like me and not very good with a piping bag, then your in luck. The coconut pretty much hides any boo-boos you make! I added a little dab of frosting in the center of the coconut to secure three blue mini chocolate eggs.
The banana creme with toasted coconut is such an amazing combination so give it a go! It’s nutty, sweet, intense flavour is such a treat!
