Banana split ice cream cake.

Ice cream and summer are almost inseparable.  I remember when I was a kid, my parents would take my brother and I on Sunday afternoon drives north to these little towns, where we would find old fashion ice cream shops.  Classic ice cream flavours and yummy sundaes topped the menu.

Banana splits are one of those sundaes that I don’t think about ordering, but when I do I remember why I like them so much!  Ice cream, whipped cream, strawberry, banana and pineapple with chocolate sauce.  As my son would say, ‘dewishous!’

Let’s take the flavours of a banana split and layer them all into a cool ice cream cake.  This is super easy to assemble and inexpensive.  Throw one together for your next summer gathering or as a special treat for the family!

8-10 chocolate ice cream sandwiches
1 container of cool whip topping (or equivalent)
1 cup of strawberries, very thinly sliced (approximate)
1 cup of pineapple pieces (approximate), let excess liquid drain
1 banana sliced
Chocolate or fruit sauce or chocolate shavings to garnish

Line a 4×8 loaf pan with wax paper or parchment paper.  Layer the ingredients in the following order;

  • 1/2 of the cool whip topping
  • All of the banana
  • One layer of ice cream sandwiches (cut bars to fit if needed)
  • All of the strawberries
  • Remaining cool whip topping
  • All of the pineapple pieces
  • One layer of ice cream sandwiches (cut bars to fit if needed)

Wrap the tail ends of the wax / parchement paper over the top.  Wrap entire thing in plastic wrap and place in the freezer until firm.  At least 1 hour.

Remove from freezer and unwrap.  Invert onto a plate and top with chocolate / fruit sauce or chocolate shavings if desired.  Slice and serve!
