Who doesn’t love discovering a new, refreshing drink? You may have seen the grapefruit granita I shared last week and I’m continuing with the grapefruit theme but adding pomegranate juice and muddled mint. It is AMAZING and unexpected! If you don’t like, or can’t have grapefruit juice, orange is an excellent alternative.
1/4 cup fresh squeezed pink grapefruit juice
1/4 cup pomegranate juice
1/2 cup club soda
Bunch of fresh mint (10 leaves or so)
1 tsp white sugar
Add the mint and sugar into the glass. Use a muddler or something with a flat end. The end of a wooden spoon, rolling pin…. you get the idea. Push the sugar into the mint, but don’t pulverize the mint. If you do, it will taste grassy. You just want to release the oils, not mush it into non existence. You’ve succeeded when the mint becomes fragrant and aromatic.
From there, fill the glass with ice, add the grapefruit juice, pomegranate juice and club soda. Garnish with a slice of grapefruit or make a cone out of a slice (held together with a toothpic), fill with pomegranate arils and a sprig of mint.
Would be great with a little shot of somethin’… if you so desire. *wink*.
